Original recipe from: http://vegan-und-lecker.de/2014/07/08/koestlich-cremiger-kaesekuchen-in-roh/

For the dough:

  • 130 g almonds
  • 75 g dates (dried, without seeds)
  • 1 table spoon of water (sounds little but makes a big difference)
  • one package vanilla sugar

A power blender is not necessary. Grind all ingredients until they're fine enough for your taste and make the bottom and the walls of a small form (bottom area of about 250 cm^2 which is a round form with a diameter of 18 cm or a 21 cm times 12 cm rectangular form). Clean the blender to make the filling in it.

For the filling:

  • 200 g cashews (not roasted, not salted and drenched in water over night - might smell funny but that's okay)
  • 75 ml lemon juice
  • 60 g agave sirup
  • 75 g coco oil (this is hard but the mixer will soften it)
  • bit of salt
  • bourbon vanilla aroma for 250 g of flour or 500 ml of liquid

A power blender is not necessary because the cashews are very soft. A Zerkleinerer is sufficient. Pour the mass onto the dough in the form and put into the fridge over night to harden.
